the tinkerer - a guest post from sarah

i have a very special treat for you today friends, her name is Sarah from Tinkerer.  she's my very newest bloggy bud and i love her already.  we're so totally on the same wavelength!  so enjoy her, go check her out and love her as much as i do!

It’s Sarah, also known as “Betty” because I’m a little homemaker…born that way…
& “Pockets” (because I love dresses with pockets),
Blogging my life away over at “Tinkerer”!

I am a stepmama to a wonderful, archery, lego loving 10 year old who just so happens to know everything about all WWII planes. He would be my lifeline in that subject matter. I am a military wife; it’s different, doable, but totally wouldn’t wish the separation, uncertainty, fear, and the list goes on, on anyone. I work fulltime. I miss being a student and having a flexible schedule for my family.
If I were to define myself, I’d say I feel… a lot. Feelings don’t scare me. I embrace life, my family, my friends and I love that I feel passionately. I’m also always tinkering with something… reading, sewing, photography, hiking, beaching, gardening, baking… staying still is not my specialty.

Garden:


It’s tiny, but it’s mighty.
There is nothing as tasty as a fresh tomato handpicked from your garden.
Add a jalapeno and some herbs…
And it sounds like Fresca Salsa time!

Fresca Salsa Recipe:
Mix in one bowl
Dice 2 tomatoes
Dice 1 red onion
Chop/Muddle 2 garlic cloves
Chop a handful of Basil
1 tsp of Olive Oil (or sunflower oil)
Squeeze a lime
Add S&P to taste

It’s great on grilled chicken, with celery, with chips (if you are cheating), on tacos…or by the spoonful!

Bruschetta Chicken Recipe:

 

Prep: 20 min. Bake: 30 min. Yield: 6 Servings

Ingredients
•1 egg with a dash of water beaten
•6 boneless skinless chicken breast halves
•1/4 cup grated Parmesan cheese
•1/2 cup dry bread crumbs (as needed)
•1 tablespoon butter, melted
•3 medium or 2 large tomatoes diced
•3 tablespoons minced fresh basil
•4 garlic cloves, minced
•1 tablespoon olive oil
•1/2 teaspoon salt
•1/2 teaspoon pepper
•1/2 cup mozzarella cheese

Directions

•Place bread crumbs and eggs in separate bowls. Dip chicken in egg, then in bread crumbs; place in a greased 13-in. x 9-in. baking dish. Combine the cheese and butter; sprinkle over chicken.

•Loosely cover baking dish with foil. Bake at 375° for 20 minutes. Uncover; bake 5-10 minutes longer or until a meat thermometer reads 170°.

•In a small bowl, combine the remaining ingredients (tomatoes, olive oil, basil, salt, pepper, to taste). Sprinkle/place cheese on chicken, then spoon the bruschetta mixture over the chicken. Return to the oven for 3-5 minutes or until tomato mixture is heated through.

I serve with a salad and strawberries, but any vegetable will do!
If you can’t tell, I am on a tomato kick.
