fresh corn salad, a new look & clean eating update.

first thing's first - how much do you love the new look around here?  i'm a little lot obsessed with it.  so with that said, a huge, enormous thanks goes out to Chelsea @ Yours Truly for making it all happen.  she was amazing to work with and really made it perfect for me.  oh and her prices are beyond reasonable, so if you're in the market for something new, go check her out.  heck, go check her out anyway, because she has an awesome blog too!

remember this amazing corn trick we all learned about yesterday?  time to put it to good use!

this salad turned out better than i even imagined it would.
so yummy, so refreshing, perfect for summer!

so good in fact, that there are no after pictures, i was too concerned with gobbling it all up i guess...
pre-beans

You Need:
5 ears of fresh corn, shucked & cutt off the ear
1 pkg cherry tomatoes, halved
1 can white/northern beans, drained & rinsed
1/2 c white vinegar(rice wine or red wine would be good too!)
1/4 c EVOO
salt & pepper
italian seasoning

(i had leftovers the next day and added fresh cilantro which was a great touch!)


one of my favorite things about summer - fresh, delicious corn
cook your corn and cut it off the cob, add that to a large bowl along with your halved tomatoes, beans, liquids & spices.
stir until combined then chill.
serve & enjoy.  


again, no after picture, so just imagine all this fresh goodness in your mind & run with it.

*clean eating update*
it's been going, but i've definitely been splurging too much too.  it's hard though when you're away all weekend and not really in control of the situation.  but i will say that even not being in control, i only had a few splurges(bevs, 2 cookies and a soda).  oh, then last night i had a pizza burger, waffle fries & hawaaian wedding cake.  oopsy daisy!  but with all that said, and other than all that, it's been good.  it's been surprisingly easy too.  i think the key i that i need to get a little more organized.  waiting until the morning to get lunches/food ready just isn't a great idea when you're already crunched for time, so i'm going to start really trying to get my stuff ready the night before and planning out meals so i'm not left in a pinch.  summer is the busiest time of year for me though, and a lot of time is spent out of the house & doing things, so it will be trying, but i'm sure come fall this will all become a lot easier!

  2. Oh, yum!! This looks delicious! I make something very similar, except that I add lime juice, avocados and red onions and forego the white beans. Then I eat it with chips. =)
