skinny-ish taco salads.

skinny-ish.  as in not totally healthy, but not a total bomb.
hungry for the amazing tastes of a taco salad but not ready to break the calorie bank?
here it is.
of course you can spend tons of time making a "to the tens" taco salad.  i mean lets be real i could have whipped up some seasoned beans, lots of chopped veggies and some cilantro lime rice, BUT lets be honest, i don't have that time.  at least not on a week night.  so here is what we came up with - mostly healthy, very easy, and totally yummy.


You Need:
1 lb super lean ground chuck
1 head romaine, chopped
1 pkg (or 3 tbsp homemade taco seasoning)
salsa (i used homemade, see HERE)
shredded mexican cheese
catalina dressing
sliced green onions


cook your beef with the taco seasoning, add some water and cook it some more until the liquid evaporates.  Place your chopped romaine on a large plate, top with your seasoned meat, salsa, cheese, catalina dressing and green onions.  catalina dressing?  yes.  trust me.  one of my best friends brought a taco salad over for dinner one night and used this.  i was NOT feeling good about it.  actually, i never tasted catalina dressing in the first place, but it didn't seem right on a taco salad.  again, trust me.  the spice from the salsa and the "sweet" from the catalina are perfection together.  i know don't think i can live without catalina.  serious.
