greek chicken, broccoli & rice skillet

i've been on a greek food kick ever since we went out for date night a few weeks ago (the restaurant had some delicious greek inspired dishes!).  so i decided to use some stuff that i had on hand and whip up a pretty simple & quick meal that totally hit the spot.  


you need:
2 chicken breasts, cut into bite size chunks (i marinated mine in italian dressing)
1 large head of fresh broccoli (or a small bag of frozen)
1/2 c chicken broth
1 c brown rice, cooked
1/2 - 3/4 c greek dressing (i used gazebo room lite)
1/2 c reduced fat feta cheese

place your chicken breasts in a pan over medium heat and let it cook almost through.  next, add your broccoli and chicken broth and cover for about 5-7 minutes.  once your broccoli is tender, add in your cooked rice and greek dressing.  combine all of the ingredients and let them simmer for a minute or two.  serve topped with the feta cheese.


easy, quick & healthy week night meal - enjoy!

  2. Hi, you will have seen that the new Food on Friday ingredient is chicken. I noticed that you did this post on chicken which I think would be great linked in. We already have a collection of over 40 recipes which is wonderful. At the moment the Food on Friday edition with the most links is Beef with 73 – I get the feeling though that Chicken could become the new record holder!
