i had a request from the hubs - shrimp fried rice.
but i kind of wanted stir fry. so i made shrimp stir fried rice.
the best of both worlds.
You Need:
4 cups rice, cooked
1 pkg stir fry veggies
2 eggs, beaten
sesame oil
soy sauce
fish sauce
ground ginger
10 shrimp
sriracha (optional)
I cooked my rice beforehand, but if you don't, start by doing that! In a wok or large pan add a swirl of oil, let it get nice and hot(medium high heat), then throw in your stir fry veggies. Stir (duh)! Once your veggies are crisp tender set them aside. In your wok add your rice and pour over that your egg mixture and mix well, keep stirring for about 1 minute, then add about 6 splashes of soy sauce, a drizzle of fish sauce and a double drizzle(ya like that?) of sesame oil. Mix that all together then add your shrimp and stir stir stir some more. I mean, this is stir fry after all! Once your shrimp are almost cooked through throw your veggies back in, give it a few more splashes of soy sauce, about 9 shakes of ground ginger, mix once more, then serve. I added sriracha sauce to mine of course because i can't seem to get through a meal without adding some sort of spicy condiment to it!
