It was one of those nights where I didn't feel like cooking at all. Takeout was calling my name.
But just then, I remembered my vow oh so long ago to clear out my pantry.
So I went and took a look, and this is the meal that came of it.
It was good, and the leftovers were too.
You Need:
1 lb ground beef
2 bags of brown boil in a bag rice(or the equivalent of regular)
1 can diced tomatoes
1 pkg dry italian dressing seasoning
1 can cream of mushroom soup
10 oz button mushrooms, quartered
large handful of shredded cheddar cheese
While you're cooking your rice - in a large saucepan, brown your meat - add your dry dressing mix, tomatoes and cream of mushroom soup and combine. Heat over medium heat and let it simmer until the mixture gets thick. In another pan saute your mushrooms with a little oil and season with salt & pepper, once they're tender add them to the beef mixture. Once your rice is cooked, add that in too. Put the entire mixture into a baking dish and cover generously with shredded cheddar cheese. Bake at 350 until bubbly and the cheese is melted.
It was a bowl of hearty goodness, perfect for a gloomy day(which is when I devoured enjoyed mine!)

DeleteWhen IC is away, I mostly just make things out of the cupboards. Which generally is something with rice and cabbage!
