Thank you Pioneer Woman for another lovely recipe. I tweaked it a bit, but all in all it's the same thing, and it was very very tasty. I'd make extra sauce next time because I like my pasta super saucy.
You Need:
1 small jar store bought pesto
1 pint light cream
2 tbsp light butter
1/3 c grated parmesan
14.5 oz box thin spaghetti
2 tomatoes, diced & deseeded
Start your pasta water, and once that comes to a boil add your box of pasta. While that cooks, pour your cream and butter into a medium saucepan over med-high heat. Once that butter melts add in your cheese and pesto. Combine all ingredients and let the cheese melt and the ingredients get happy. Drain your pasta and add it to your sauce, toss until coated. Add in your tomatoes and toss lightly. Mangia!
I love this type of pasta. Eat it allll the time! Probably not healthy... I use cheese tortellini with it. It's amazing
