Shrimp and Veggie Garlic Pasta

You should all know by now my love for pasta, which I inherently passed on to my son.  He loves his "noonles" that's for sure!  Shrimp and veggie garlic pasta, here ya have it.  Easy, healthy, and most importantly - deliiiiiiicious.

You Need:
1 lb shrimp
1 c fresh broccoli florets(or frozen & thawed)
1/2 large red pepper, diced
1/2 large onion, diced
2 cloves garlic, pressed or minced
2 tbsp olive oil, plus some for later
1/2 c chicken broth
2 tbsp light butter
1/2 box ronzoni smart taste fettuccine
1 tsp red pepper flakes
parmesan cheese

While your pasta water comes to a boil and your pasta cooks, work on your "sauce".  In a large saucepan drizzle your olive oil, then add your onion, pepper and broccoli, let it saute for a few minutes then add your garlic and chicken broth.  Let this all cook until veggies are tender and liquid has cooked down some.  Add your butter and shrimp and cook until your shrimp are cooked.  Place your pasta in a bowl, drizzle with a little oil(I used garlic infused olive oil, mmm!) then top with your shrimp & veggies, red pepper flakes & parmesan.

P.S. -- come over & visit Nicole Marie today, I'm guest blogging and have another amazing recipe, so you're getting double the food fun today!
