Cilantro Lime Rice

I've made this before following recipes from other sites, but it never turned out as flavorful as I would like it.  So I started messing around with the ingredients until I got it perfected.  Here is my version of cilantro lime rice, and I happen to think it's the best.

You Need:
(This recipe serves 2)
1 c brown rice
1 c chicken broth
1 tbsp light butter (I like Land o' Lakes)
1/3 c cilantro, chopped
juice from half a lime
salt & pepper

simple, fresh ingredients.  
cook rice in your broth according to the package.  once it's cooked add your butter and place the lid back on and let the butter melt.  take the lid off and combine the rice & melted butter.  add your cilantro, lime, salt & pepper.  combine & enjoy!
we had this the other night served with our asian chicken meatballs and it was great!

  2. normally i have a hard time eating cilantro, but the lime makes this sound really good! i bet it balances the cilantro nicely.

    1. well that's the great thing about this rice, you can switch it up to your preferences. you could totally omit the fresh herbs alltogether, or add in basil or anything else you love! :) thanks for coming over!

  3. I just saw another recipe for cilantro lime qunioa. I bet the rice is a little bit easier to make. It looks delicious!
