Swiss steak soup? Huh?? I love swiss steak, but didn't want swiss steak. Does that make any sense at all? So I created swiss steak soup. Not only was it a hit with me, Josh & my Mom, but Max loved it, l-o-v-e-d it. He ate green peppers, and mushrooms. Unheard of. We had the leftovers for dinner tonight and it was definitely more of a pasta dish than a soup, but still very good and if you wanted it more soupy you could always add some beef broth or water.
You Need:
1 pkg beef cubes
1 carton beef broth(I used frozen beef gravy I had on hand)
2 green peppers, chopped
1 medium onion, chopped
1 pkg baby bellas
1/2 tbsp minced garlic
1 large can crushed tomatoes
1 small can diced tomatoes
half a bag of egg noodles

Saute your beef to get a sear on it. In the meantime place your broth(or in my case a block of frozen gravy), peppers, onion, mushrooms, garlic, crushed tomatoes, tomatoes and spices(I used italian seasoning, salt & pepper) in crockpot on low. Once your beef is browned throw that in too. Let it cook on low for 6-8 hours, half hour before dinnertime add in your noodles and let them cook. Voila. We ate ours with melted cheese on top. Total YUM.

Looks really good. Got an idea's for grade tomatoes? We just so happen to have found them really cheap :)
HA - you're too funny! Although I do love swiss cheese, actually any cheese :) I do have a ton of great tomato recipes. First and foremost - homemade salsa, fresh tomato pasta(on my blog), chopped up tomatoes, basil, olive oil, vinegar & spices, eat it cold, SO good.
